Monchichi Café is committed to the health of our community.
We believe that health-focused communities start with healthy bodies. Our
Service provides high quality and health promoting culinary choices, affect people on
a molecular level and help clear the body, mind, and spirit. At
Monchichi nourishment through food is a sacred process.
Categories of Food – There are no food categories because monchichi is a specific
way of eating like macro, blood type, vegan… it’s its own.
We offer foods for many dietary needs that are appealing to the tastes of a
broad clientele.
Vegetarian: Contains no meat products, but may contain animal products
such as organic cheese or honey
Vegan: Contains no animal products
Raw: Uncooked and some dehydrated foods
Cooked: Cooked in conventional ovens
I don’t want to accommodate the various diets out there. Mostly I don’t agree with
Vegetarian, Vegan or Raw completely so I would prefer that Monchichi be it’s own diet
separate and apart from the others, yet incorporates many of the best qualities of
other diets.
Dietary Principles
A lifetime of research and experimentation has led Monchichi to some basic dietary
principles that we adhere to in creating our menus. Our
combinations of sprouted grains, seeds and nuts, along with fruits, vegetables, herbs
and seaweeds are created with the utmost care for the preservation of the living
vitality and nutrition of ingredients. We use whole foods. We prepare everything from
scratch without the use of synthetics or processed foods.
High Quality Ingredients – Monchichi is gluten free, sugar free (that also means fruits
and fruit sweetener for the first 3 months.. then after fruits are reintroduced, but
eaten on it’s own as fruit doesn’t combine well with anything else), deserts are
sweetened with xylitol and eurithritol or stevia
When concentrated sources are used, they are combined with high alkaline
vegetables, herbs and pre-biotics to make them more easily digestible.
Our menu items are prepared with high amounts of chlorophyll and fiber. Our foods
contain low amounts of oil, wheat, and gluten, as well as limited concentrated
foods such as beans, dairy, and nuts. When concentrated sources are used,
they are combined with high fiber vegetables, herbs, or fruits to make them more
easily digestible. Our sweet dishes are made with whole fruit, dates, dried fruit,
or agave nectar.
Proper Food Combining
Most of our dishes combine foods that complement each other to facilitate the
digestive process and balance the bodies pH.
Optimal Food Assimilation
Our ingredients promote digestion of vital food elements and minimize detrimental
effects from foods to the cells, organs, and tissues of the body.
99% Organic
We acquire our produce from organic, local, and free trade farms. Organic farming
avoids the use of synthetic chemicals and genetically modified organisms
(GMOs) while following principles of sustainable agriculture emphasizing soil
health, which in turn yields high nutrient foods.
We are dedicated to offering an alternative to the lifeless commercial foods
commonly available today. By producing healing, nourishing foods that are produced
in support of our environmental, social, and economic values, we support alternatives
to wasteful, environmentally devastating, and physically harmful practices
of mainstream culture.
